This tasting explores the soul of Clonakilty Distillery, a gem located on the southern tip of Ireland, overlooking the Atlantic Ocean. Founded by the Scully family, who have been growing barley on this rugged land for nine generations, the distillery benefits from a unique location: the ageing warehouses are situated on a cliff overlooking the sea. The salty air, ocean mist and temperature variations accelerate the interaction between wood and spirit, giving these whiskies savoury and complex notes that are impossible to replicate inland.
